Grilled Steak Bites
Combat operations for my latest client are winding down, and I can start to think about something other than the latest crisis.
I have a taste for some basic home cooked food, while there are any number of excellent steak houses around, I really want my own. Unfortunately it is hot enough to grill directly on the side walk, so this will need to be done fast.
Juicy, mouth sized chunks of steak, dry rubbed, and done on a grill pan or on a grill. I have cravings for this, and make it on a somewhat regular basis, with often mixed success. I suppose the real trick is to get a crisp crust, and still do a medium on the inside. A VERY hot grill or a searing hot grill pan for this, and maybe finish in the oven.
